It’s incredibly simple and quick to put together, yet it gives off an air of gourmet elegance. Unlike tuna salad, which requires chopping onions and celery, mixing in mayo, and letting it sit, preparing tomato mozzarella and fresh basil salad is a breeze.🥗

Ingredients  

  • 8 oz mozzarella balls (Ciliegine – cherry size)
  • 1 pint tri-color cherry tomatoes, halved
  • 25 leaves fresh basil, chopped or chiffonade
  • 1 c arugula

Salad Dressing

  • 2 tbsp pepper infused olive oil, or regular olive oil
  • 1 tsp balsamic vinegar (not glaze)
  • 1/4 tsp oregano
  • 1/8 tsp basil
  • 1/8 tsp salt
  • 1/8 tsp black pepper

Instructions

  • Make the salad dressing: In a small bowl or salad dressing bottle, mix together the olive oil, balsamic vinegar, oregano, basil, salt and pepper. Stir or shake to combine.
  • Combine the salad ingredients: In a large bowl, toss together the mozzarella balls, tomatoes, fresh basil and arugula. Add the salad dressing right before serving. Be sure to stir or shake the dressing right before drizzling it onto the salad. Garnish the salad with whole fresh basil leaves and sprinkle more oregano and freshly ground black pepper on top, if desired. Enjoy!
