Ingredients  

  • 2 large cucumbers, peeled and sliced thin (about 1/8 inch thick)
  • 1/3 cup plus 2tbsp of xylitol, or other sugar free sweetener
  • 1 cup white distilled vinegar
  • 2 tablespoon avocado oil (or other neutral oil)
  • 3 green onions, white part only, finely chopped
  • 3/4 teaspoon salt
  • 3/4 teaspoon pepper
  • 1 teaspoon fresh dill fronds (leaves), finely chopped
  • 1/4 teaspoon mustard seeds

Instructions

  • Make the marinade: In a large bowl, add the xylitol to the vinegar and mix until mostly dissolved. Add in the rest of the ingredients, except the cucumbers, and mix well.
