Ultimate Keto Cobb Salad

This yummy nutrient-packed salad features crisp greens, tender grilled chicken, creamy avocado, smoky bacon, tangy blue cheese, and boiled eggs, all tossed together with a zesty dressing. Ingredients  

  • 1 small head iceberg lettuce, cut into 1 inch pieces
  • 2 green onions, white part only, finely chopped
  • 1 ripe avocado, diced
  • 3 eggs, hard boiled, cut into wedges
  • 1 1/4 c grape tomatoes, halved
  • 2 seasoned and grilled chicken breasts, sliced
  • 1 red bell pepper, sliced into strips
  • 1/2 c purple cabbage, chopped
  • 6 slices crispy bacon, chopped
  • 1/4 c mozzarella, shredded
  • 3 oz blue cheese, crumbled

Instructions

  • Mix the lettuce with the onion: In a large bowl, mix the lettuce with the chopped green onion whites. Even out the top to prepare it for the toppings.
  • Decorate the top lettuce with yummy ingredients: Start with the avocado and put a line of it on top of the lettuce. Then, continue to do the same with the next 5 ingredients.
  • Garnish the top of the salad: Sprinkle the mozzarella and then the blue cheese on top of the salad to top it off. Serve with your choice of dressing on the side. I love blue cheese with this, but whatever suits your fancy!
  • Garnish with chopped green onion if desired.
