Ingredients  

  • 5 ounces spring mix
  • 1 pint cherry tomatoes halved
  • 1 red bell pepper sliced into strips
  • 1/2 cup pecans
  • 1/4 cup green olives
  • 1/4 cup Kalamata olives
  • 8 ounces feta cubed
  • 3 slices purple kale for decoration, optional
  • 3 slices romaine lettuce for decoration, optional

Herby Green Tea Citrus Dressing

  • 1/4 cup olive oil
  • 1/4 cup green tea strongly brewed
  • 1 teaspoon apple cider vinegar
  • 2 tablespoons xylitol
  • 1/8 teaspoon oregano
  • 1/8 teaspoon basil
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon Morton Season All
  • 1/4 teaspoon leek powder
  • 2 teaspoons lemon zest
  • 4 teaspoons lemon juice

Instructions

  • Make the salad dressing: In a small bowl or salad dressing bottle, mix together the olive oil, apple cider vinegar, xylitol, oregano, basil, salt, pepper, Season All, leek powder, lemon zest and lemon juice. Stir or shake to combine.
  • Combine the salad ingredients: Line a large bowl with the purple kale and romaine leaves, if using. Then, add the spring mix. Nicely arrange the tomatoes, peppers, pecans, green olives, Kalamata olives and feta on top. Serve with the salad dressing on the side. Be sure to stir or shake the dressing right before pouring it onto the salad. Garnish with more oregano and freshly ground black pepper on top, if desired. Savor!
