Elegant Keto Antipasto Salad with Rose Water Green Tea Dressing – I had a lot of fun making this elegant keto salad. I was wanting to create something really beautiful while sticking to a keto diet, and I think I succeeded with this dish.

If you haven’t noticed, I really love including flowers🌺 in my pictures. In the beautiful Garden State of New Jersey, my garden flourishes with vibrant blooms throughout the year, except during the winter season, of course.

I love visiting my local nursery, I always get lost in the beauty of the blooms on display. The nursery becomes a treasure trove, offering so many options that never fail to inspire me. I carefully select the prettiest flowers to enhance the aesthetic appeal of my culinary creations.

I was so happy to use my new turquoise chippy paint-embellished port door from an old ship for this photo backdrop, I think it really works with the rest of the image.😊

Do I have to use rose water in the dressing? If you’re not a fan of rose water, no worries! I completely understand. Instead, you can try using Earl Grey tea or green tea for a pleasant flavor. Just keep in mind that you might need to use more of it compared to rose water and a little bit goes a long way with rosewater.

Do I need to cut out fancy shapes too? I mean this one might be a little obvious but, you don’t necessarily have to cut them into fancy shapes (hahaha😂). Regular slices will do just fine.

How do I make these cuts for the ham and other ingredients? I use these molds from Amazon. I tried a couple of different sizes and you can play around with it too. It doesn’t have to be exactly like mine so …..give it a try! (Links below)

When to serve this beautiful salad? The last time I served this beautiful salad, it reminded me of a fancy get-together I had with some friends. The women got really excited about it, whereas the men didn’t show as much enthusiasm. Ha, probably because all the men eat are chicken parm and pizza. Are the men in your life the same😂?

Anyways, this is just perfect for a gathering where you want to add a touch of elegance. You can enjoy it with your girlfriends, have a nice keto bottle of wine, and offer regular wine for friends who aren’t on a keto diet.

To make things easier, you can pre-cut the cheese, ham, and butternut squash in advance so that assembling the salad on the day of the gathering becomes quick and effortless. It will still look fantastic.

You can also prepare this salad as a delicious meal after work one night or prep the ingredients ahead of time, for lunches during the week. I’ve also noticed when making the salad for lunches it comes together really quickly, leaving you with a satisfying and enjoyable midweek meal.

Ingredients  

  • 4 oz babycrispy green leaf lettuce, like from Little Leaf Farms
  • 1 oz purple baby salad leaves
  • 4 leaves leaves nasturtium
  • 3 radishes, thinly sliced
  • 5 slices ham,folded over and cut into circles using a cookie cutter
  • 5 slices salami, cut into circles using a cookie cutter
  • 2 slices provolone cheese, cut into circles using a cookie cutter
  • 1 tbsp tablespoon sliced almonds
  • 1 bunch small bunch butternut squash noodles
  • 1 bunch edible flowers, like edible purple aster, optional
  • 1/2 tbsp tablespoon dried edible rose petals

Rose Water Green Tea Dressing

  • 1/4 tsp rose water
  • 1/4 cup olive oil
  • 1/4 cup green tea, strongly brewed
  • 1 tsp apple cider vinegar
  • 2 tbsp xylitol
  • 1/8 tsp oregano
  • 1/8 tsp basil
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 1/4 tsp Morton Season All
  • 1/4 tsp leek powder
  • 2 tsp lemon zest
  • 4 tsp lemon juice
